Ingredients:
• 2 cups of rice
• 3 tablespoons of butter
• 1 tablespoon of olive oil
• 1 onion (finely chopped)
• 1/2 cup of raisins
• 1/4 cup of pine nuts
• 3 cups of hot water or chicken broth
• Salt
• Black pepper
• 1 teaspoon of cinnamon (optional)
Instructions:
1. Wash the rice and soak it in warm water for about 30 minutes. Drain and set aside.
2. Heat the butter and olive oil in a pot. Add the finely chopped onion and sauté until it turns golden.
3. Add the pine nuts and lightly toast them.
4. Add the raisins and stir for a few more minutes.
5. Add the drained rice and sauté until the rice becomes translucent.
6. Add the hot water or chicken broth, salt, black pepper, and optionally, cinnamon.
7. Cover the pot and cook on low heat until the rice absorbs the liquid.
8. Once the pilaf is cooked, remove it from heat, let it rest for 10 minutes, and then serve.
